Stir Fried Pork Wraps: Serves 4
Small flour tortillas or pocket pita breads make a perfect wrap for this quick pork stir-fry.


Ingredients:

8 dried shiitake mushrooms*
1 tbs sesame oil
2 tbs peanut oil
300g pork mince
1 small red onion, very thinly sliced
¼ savoy cabbage, very thinly sliced
2 tbs plum sauce, plus extra to serve
1 tbs chopped mint leaves, plus extra to serve
2 carrots, thinly sliced into matchsticks
1 Lebanese cucumber, thinly sliced into matchsticks
8 small flour tortillas, warmed according to instructions
Sauce (can be substituted with Simply Original Asian Marinade):
¼ cup (60ml) light soy sauce
2 tbs Chinese rice wine (shaohsing)* or dry sherry
2 tsp caster sugar
2 tbs grated fresh ginger
2 tbs plum sauce

Method:
1. Soak the dried mushrooms in ¼ cup (60ml) boiling water for 10 mins, then slice. Reserve the soaking liquid.
2. Heat the oils in a wok over medium-high heat. Add the pork and stir-fry, breaking apart with a spoon, for 3-4 mins until
lightly browned.
3. Add the sauce ingredients - soy sauce, rice wine, sugar, ginger, plum sauce and stir to combine.
4. Add the onion, cabbage, chopped mint and shiitakes and stir-fry for a further 3-4 mins or until cabbage wilts.
5. Serve the pork & vegetables, warm tortillas and extra mint & plum sauce separately for people to make their own wraps.
